Cookin’ with Meat!

Santa brought me one of these for Christmas.

The Saturday after Christmas, Anna and I picked up a brisket to use for burger-making purposes. That’s right, I ground up brisket to use as burger meat!

It sounds weird, but it apparently has the right kind of fat, and the right mixture of fat-to-meat. They were delicious burgers.

If you haven’t had fresh ground meat before, you should try it. There’s a huge texture and flavor difference. Food Network (specifically Alton Brown) taught me that you can take just about any piece of beef to the butcher counter at a grocery store and ask them to grind it, and they’ll usually do it. Use it the same day, though. If you put it in the refrigerator or freezer, it’ll be the same as any other ground meat. I highly recommend this for anything you cook that requires ground beef.
