Super Bowl Bacon Explosion

So the Saints won. As a fan of the Saints, I am pleased. Today I am wearing my Aaron Brooks New Orleans Saints jersey.

Amy was in town, and to celebrate the Super Bowl, she crafted a bacon explosion.

For a photojournal of the creation, look below the fold:

First, a lattice of bacon was woven from 1/4" thick slices of hickory smoked bacon:

I used the food grinder attachment to grind up some pork for sausage. Anna got me some seasoning from Savory Spice Shop to flavor the fresh-made sausage:

While that magic was happening, the cast-iron griddle favored some fryin' bacon:

The sausage layer was then lovingly applied to the bacon lattice:

Some barbecue sauce and seasoning was added while the fried bacon was crumbled:

Hickory smoked for three hours, which turned out to be a little bit long. It was cold outside, so the temperature gauge was difficult to read and trust:
